Lyre’s Built Its Non-Alcoholic Spirits Without Starting With Alcohol

Most people understand the basic idea behind a non-alcoholic spirit. The harder question is how you make one taste recognizably like gin, whiskey or another familiar bottle when alcohol was never part of the recipe.

That is the problem Lyre’s has been working on since the brand launched in Sydney in 2019. Its range is built as non-alcoholic from the beginning, rather than starting with a traditional spirit and removing the alcohol later.

The distinction sounds technical, but it shapes the way the product is made. Lyre’s starts by studying the flavor profile of the spirit it wants to recreate, then builds around botanicals, extracts and natural flavors that can approximate the aroma and structure people expect in a cocktail.

The goal is not to invent an entirely new category of drink every time. Lyre’s is deliberately working with things people already know.

That helps explain the size of the range. The brand has developed non-alcoholic versions inspired by classic spirit styles so drinkers can make familiar cocktails without reaching for a full-strength bottle.

The Mimicry Is the Point

Lyre’s takes its name from the Australian lyrebird, an animal known for its ability to mimic the sounds around it. For a company trying to reproduce the character of established spirits without relying on alcohol, the connection is fairly direct.

The challenge is that alcohol does more than make a drink intoxicating. It also changes aroma, texture and how flavors carry across the palate, so removing it from the equation leaves producers with a different technical problem than simply making flavored water.

Lyre’s addresses that by building each product around the experience it is trying to imitate. The company says its formulations are designed to reproduce the flavor and mouthfeel of traditional spirits closely enough to work in cocktails, where balance matters as much as the individual bottle.

That also separates its approach from dealcoholized products. Those begin as alcoholic beverages and go through a process to remove the alcohol afterward. Lyre’s takes the opposite route, developing its products as non-alcoholic from the outset so the flavor and texture can be adjusted with that end point in mind.

Its products contain less than 0.5% ABV, the threshold commonly used for non-alcoholic beverages in many markets.

Built for the Cocktail, Not Just the Shelf

A non-alcoholic spirit can be interesting on its own, but for many drinkers the real appeal is being able to make a familiar Negroni-style drink, spritz or other cocktail without the same alcohol content. Lyre’s has leaned heavily into that use case, building out enough variants that drinkers can swap individual components rather than starting with a completely different recipe.

That flexibility is part of why the category has moved beyond the old idea of simply ordering soda or juice when someone does not want alcohol. A drinker can reduce the alcohol in a cocktail by replacing one component, or make the entire drink non-alcoholic.

Lyre’s has grown well beyond its Australian beginnings in the process. The company says its products are now available in more than 70 countries, with distribution across North America, Europe and other international markets. It has also collected recognition from competitions including the International Wine & Spirits Competition and the San Francisco World Spirits Competition.

People already know which cocktails they like. Lyre’s is trying to make sure taking alcohol out does not require giving up the drink along with it.
